January Whole30 – Day Fifteen

Officially half way through! This is getting easy…but only because I’ve been eating boring ass food. I actually steamed broccoli the other night, out of habit. I had no plans to eat steamed broccoli with dinner, but there I was, steaming broccoli at 9pm on a Saturday in my cat slippers. Someone help me.

I’ve been obsessed with everything spicy the last few days and nothing is easier to throw together than fajitas! I have an easy shrimp fajita recipe coming to the blog tomorrow. I would have posted it today, but I ate the entire plate in like 2 seconds because it was that good. I had some extra cauliflower that needed to be eaten and what goes better with fajitas than some Mexican cauliflower rice?! I got the recipe from my Juli Bauer’s Paleo Cookbook – one of my favorites.

I go through phases with cookbooks. But after a recent trip to Barnes & Noble, I’ve been obsessed with cookbooks. I tend to read them like novels and only make a few of the recipes. But after how easy and delicious the Mexican cauliflower rice was, I realized I need to change that. I’m inspired.

So I’ve been perusing my favorite paleo cookbooks and blogs to get some new ideas. If you’re ever stuck for inspiration, these are my go-to people!

  1. Nom Nom Paleo – I highly highly highly recommend the Cracklin’ Chicken (that seems to be the internet’s favorite too), but honestly everything looks freakin incredible. Roasted Rosemary Almonds, Cauliflower and Carrot Purée, Shrimp Stuffed Mushrooms?! Can’t wait to try it all!
  2. Paleomg – The first cookbook I ever purchased on my own was Juli Bauer’s Paleo Cookbook and I proudly display it on my coffee table. Doesn’t sound like much of a display, but I live in basically a closet, so I try. Her recipes are always delicious and I love her podcast, so real.
  3. Diane Sanfilippo – I’ve been a fan of Diane’s for a while, but I’m ashamed to say, I haven’t spent much time on her website! I just bought Practical Paleo and have been completely fascinated. So fascinated that I signed up for the Balanced Bites Master Class! Looking for quick tips and inspiration? Check out her Instagram Stories.
  4. Whole30 – And lastly, how could I leave out the Whole30 itself?! They have awesome recipes on their site, but I find myself reading through the forums more than anything else. It’s the best way to find out if certain ingredients are approved or if anyone else is as constipated as you are.

Anyways, I’m feeling especially inspired tonight. Ready to start cooking tomorrow 🙂

Meal 1: sweet italian chicken sausage from true story foods, sautéed greens, and roasted sweet potato

Meal 2: shrimp fajitas, mexican cauliflower rice (from Juli Bauer’s cookbook), and half an avocado

Snack: maple sea salt rx bar (aka crack cocaine)

Meal 3: creamy roasted tomato garlic soup, leftover sweet potato, roasted broccoli, and chicken seasoned with red rocks hickory smoke seasoning from savory spice shop!
