January Whole30 – Day One

Yay! It’s finally here! I actually went to bed last night looking forward to the coming month and all it holds. All the food, all the cravings, all the challenges, everything. Because it’s in those challenges that you learn the most about yourself and your strength. Plus, it gives me an opportunity to showcase my stubborness under the banner of health and wellbeing.

Today was off to a rocky start when I realized I prepared nothing. With all the excitement of the new year and the shorter hours at Whole Foods, I forgot to grocery shop. It’s completely ridiculous because grocery shopping is one of my favorite activities, if not my #1 favorite activity. I know. I’m 97 years old.

But I made it to Whole Foods in the afternoon and apparently, so did everyone else. I’ve never seen more resolutioners and hangry vegans in my life. I nearly died in the parking lot three times before I even went in the store. I kid you not, one guy was driving with his knees while snarfing down some asparagus from the hot bar. The Whole Foods hot bar is amazing, but come on.

Anyways, I’m off to a good start. My food was freakin delicious today and I got a whole bunch of meal prep out of the way. Roasted brussel sprouts: coming soon to a blog near you. This blog, in case you didn’t catch that. Jokes are hard in writing. I’m 97.

Lots of greens and tea today. Not pictured: crudité platter I munched on while meal prepping. Basically just carrots and yellow bell pepper, but I’m an ass hole. So it’s a crudité.

Meal 1: summer squash basil frittata with a white sweet potato and sautéed leek greens, spinach, and onion.

Meal 2: life-changing turkey meatballs, white sweet potato, and steamed brussel sprouts

Meal 3: kale salad with salmon, butternut squash, and apples. small bowl of zucchini leek soup.

IS THIS NOT THE BEST DAY OF EATING EVER OR WHAT! Hope your day 1 was as inspiring as mine was 🙂

    Sounds wonderful! I had eggs, sauteed spinach & roasted potatoes for bfast, then spinach/tuna/etc salad for lunch, apple + almond butter for snack, then steak, green beans, acorn squash and more potatoes for dinner. Feels like I’m on track so far.
