January Whole30 – Day Two

Remember when I said I was looking forward to the struggles of this next month? Regret. Immediate regret. I know the second and third days can be tough and it’s likely you’ll be lethargic. But wow.

Between my lack of enthusiasm and the antarctic weather here in LA, it’s a miracle I did anything today. But sometimes you gotta suck it up and get shit done. Which is the attitude I had from exactly 10:45-11:12am. Then I got hungry. The Whole30 discourages snacking, so I drank a glass of water and started cleaning, hoping the hunger would dissipate. Nope. Wrong. I was hungry. About to go the gym, I didn’t want anything to heavy in my system. I went for the crudité platter. And after a few jicama sticks, I started thinking about why people eat jicama at all. It has no flavor whatsoever –  basically just crunchy water. Then I got mad. Mad that I spent $4 on something so stupid. Lesson learned.

I did manage to cook a whole chicken in my crock pot today and I’m making bone broth overnight. So delish! I’ll post how I do that soon, but here’s a preview: put the chicken in the crock pot with some veggies, turn it on.

My fridge doesn’t seem complete without a jar of bone broth in it and since it’s been so cold, all I want is soup. Soup and my neighbor’s digits. Those two are unrelated. Unless he wants soup as well. Anyways, it’s cold here. I actually had to close my window today. I’ve never closed my window. Half the time, I don’t even close the door! This is torture. But it’s nothing my heated blanket and a fresh batch of curry soup can’t fix. Haven’t had curry in like 2 days, so it seems like it’s time.

Anyways, today’s meals were fabulous! You can check out the frittata recipe here if you’re into cold eggs. I’m not. But I’m also not about to let this frittata go to waste, so here we are.

Meal 1: summer squash basil frittata with half a sweet potato and sautéed lemon garlic kale

Meal 2: half a small spaghetti squash with turkey zucchini meatballs and steamed broccoli

Meal 3: zucchini leek soup and spinach salad with crock pot chicken, bell pepper, mushrooms, red onion, avocado, olive oil, dijon mustard, and compliant balsamic vinegar
