January Whole30 – Day Eight

Today was the Mondayest Monday of all the Mondays, am I right? And it happened to be my rest day from the gym. The combination of those two things resulted in me being the ultimate bum today. Have I mentioned my heated blanket?

I did manage to get a whole bunch of cooking done today – lots of delicious recipes coming soon! Tomorrow, I’ll be posting a recipe for a vegetable hash. I always see people eating hash for breakfast during their Whole30. It’s super easy to make in bulk for the week and have ready for a quick and filling breakfast. Not entirely sure if there’s a proper way to make it, but I’m pretty sure you can put literally anything in a skillet and call it a hash. I happen to have a very colorful assortment of veggies, so I made a rainbow hash. Except blue. The only blue food I could think of would be blueberries and those aren’t even really blue. They’re purple. And blueberries with sweet potato and peppers? Pass.

I also made a batch of my carrot ginger soup, some cauliflower mash, and experimented with a butternut squash mash. I’m unintentionally on some sort of soft foods diet and my food processor is freakin exhausted.

Anyways, I’m thinking about adding a section to my blog with all my staple recipes. As much as I love to experiment with creating new recipes, I often find myself eating the same things over and over: crock-pot chicken, roasted veggies, simple soups, salads, etc. Easy recipes. Some things aren’t even recipes. I eat steamed broccoli all the time and if you can’t figure that out on your own, I can’t help you. That won’t be on the blog. But my favorite chicken breast recipe, roasted veggies, and big ass salads, those I can help with. Little known fact, I’m the official master of big ass salads.
