  1. Place chicken thighs, salsa, and chopped jalapeƱos in large pot over low heat. Make sure chicken thighs are mostly covered.
  2. Leave on stovetop at low heat for 90 minutes. Flip over about half way through.
  3. Grab two forks and pull the chicken thighs apart. They should easily pull apart into thin strips. Mix well with remaining salsa.
  4. Serve by itself, over cauliflower rice, roasted sweet potato or a Siete Foods grain-free tortilla! Top with cilantro, avocado, a squeeze of lime, and anything else your heart desires!
Recipe Notes

You could easily make this in the crock pot. Just throw all ingredients in your slow cooker and turn on high for 4 hours.
